Pumpkin Bread Recipe

2 C all-purpose flour
1 C packed brown sugar
1 T baking powder
1 t ground cinnamon
1/4 t salt
1/4 t baking soda
1/4 t ground nutmeg
1/8 t ground ginger or cloves
1 C canned pumpkin
1/2 C milk
2 eggs
1/3 C shortening

1. Preheat oven to 350 degrees.
2. In large mixing bowl combine 1 C flour, brown sugar, baking powder, cinnamon, salt, baking soda, nutmeg, and ginger or cloves.
3. Add pumpkin, milk, eggs, and shortening; beat with electric mixer on low speed till blended (about 2 minutes).
4. Add remaining flour, and beat well.

Pour batter into a greased 9x5x3 inch loaf pan. Bake at 350 degrees for 60 to 65 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes on a wire rack. Cool thoroughly before slicing.
