Ice Cream Pie

Filed under: Recipe of the Week |

This recipe is delicious, quick and easy, and it can be ready to eat in no time. It is perfect to make for impromptu company since all the ingredients can be kept on hand. Simple, impressive and a real crowd pleaser.

One graham cracker pie crust. (chocolate or shortbread would also work)
Any ice cream flavor of your choice (about one pint)
Magic Shell (found in the hot fudge aisle)

1. Soften ice cream so it spreads nicely in the pie crust.
2. Spread the ice cream evenly and smooth out the top.
3. Place the pie in the freezer so the ice cream freezes up again.
4. After the ice cream is solid again, cover the top of the pie with magic shell toping and refreeze for a few minutes before serving.

The pie can be made in advance and kept in the freezer.

Variations:
Stir in cookie pieces, chocolate or candy to the softened ice cream.
Instead of magic shell use hot fudge, caramel or strawberry toppings.
Top with whipped cream or sprinkles.
