Award-winning chef and author Peter Berley will offer an in-depth discussion, demonstration, and tasting of traditional French country bread leavened with wild-crafted sourdough culture at the Cold Spring Harbor Library & Environmental Center. All are invited to attend this free program on Thursday, April 16, 2015 at 7pm. Advance registration is required.
A distinctively tart-tasting bread, sourdough is an ancient bread made from “starter,” a combination of living yeast and bacteria grown in a paste of flour. It is the live bacteria that is reported to help digestion, boost immunity, and help ward off allergies and colds for consumers of this crunchy bread. During this library program, chef Peter Berley will teach students how to bake sourdough bread from scratch and send each student home with sourdough culture and recipes for baking at home.
The former chef of the New York City vegan restaurant Angelica Kitchen, Peter Berley has turned his attention to healthful yet tasteful home cooking, with an emphasis on local produce and organic foods. When not writing or cooking for private clients, Berley teaches classes on cooking, preserving, and baking in his North Fork Kitchen and Garden Culinary Studio located in South Jamesport. As many of his recipes are based on the vegetables he grows in his gardens, Berley’s meals “are simple expressions of what is available to us steps away from the sinks, ranges, and ovens.” Copies of Berley’s best-selling cookbooks, including The Flexitarian Table, The Modern Vegetarian Kitchen, and Fresh Food Fast, will be available for purchase after the program.
